This recipe makes 19 regular-sized cookies versus the 6 giant cookies that the original recipe that I found at this link here: These Keto Copycat Crumbl Cookies Outshine The Real Deal (hip2keto.com). I also lightened up my version by substituting 1/4 cup of the almond flour with 1/4 cup of oat flour (old fashioned oats ground into a flour). By making these cookies smaller, they resemble my favorite Tollhouse or Chips Ahoy cookies that I used to love dipping in milk as a kid! You will need to store these in the refrigerator as they do not have any preservatives in them. For that reason, if you decide you want a cookie, pull one or two out of the fridge and leave them on the counter to come to room temperature. They will be the perfect texture to go along with your favorite cup of collagen coffee or tall glass of protein fortified unsweetened nut milk (just add whey or plant protein powder) for a delicious and complete snack or dessert.

Using two of the cookies from the recipe above, I created a delicious, extra special indulgent ice cream sandwich by sandwiching 1/4 cup of Rebel Vanilla Ice Cream. This is something that I would pair with a Fuel Pull dinner if I were planning to have this as a dessert because the calories are quite a lot for an indulgent dessert, but keeping my meal within the fuel pull range, I can have my dinner and my dessert without piling on the calories. The ice cream sandwich comes out to be 332 calories, 27.5 grams of fat, 5 grams of carbs, and 6.5 grams of protein.
